My Grandma’s Coleslaw!

Every summer my grandmother makes coleslaw that no one can resist.  I have finally gotten my hands on the recipe and I am sharing it so that all can enjoy!  Not only does this side dish have a sweet, tangy delightful taste that accompanies any late summer BBQ but its main ingredient (cabbage!) is a vegetable bursting with important cancer fighting properties.  Here are a few other reasons to try it:

Cabbage is good source of:

  • Vitamins A, B3, C
  • Folic acid
  • Calcium
  • Fibre
  • It favours assimilation of iron

Without further a do, here it is:

Huguette’s Coleslaw!

Ingredients:

  • 1 green pepper
  • 1 onion
  • 1 cabbage
  • 1 large carrot
  • 1/3 cup of cane sugar
  • 1 cup vinegar
  • ¼ cup of oil (olive or sesame)

Shred the cabbage, onion, green pepper and carrot finely.  Heat cane sugar, vinegar and oil to boil and then pour over the raw veggies.  Put into fridge for a few hoursand enjoy!
