While on vacation, I remembered how difficult it was to find healthy dairy-free entrées and appetizers. Here’s a delicious, healthy, dairy-free dip to add to your repertoire. Serve it with bread, crackers, raw vegetables…
Ingredients:
- 1 ½ cups silken tofu*
- 1 ½ table spoon soya sauce
- 1 minced garlic clove
- 1 large chopped shallot
- 1/2 kilo fresh spinach
- Juice of ½ a lemon
- 1 table spoon fresh ginger
Preparation:
Wash, chop, steam and drain all excess water from spinach. Let cool. In blender, mix tofu, soya sauce, garlic, shallot, lemon juice and ginger into a smooth mixture. Add spinach to mixture and blend only a few seconds.
* Silken tofu when blended has a sour cream and yogurt-like texture and consistency. It can therefore be used as an alternative to these two. Do note that like other tofus it generally lacks taste, hence the importance of combining it with spices, condiments or strong flavored foods. When buying soy products, always make sure to choose organic.
